This is very impressive, very impressive. Those that know me, know that I'm not a great fan of small cask matured whiskies. BUT tasting David's entry level Classic malt, just confirms in my mind that David is on the right track. His distilling skills, oak management and maturation abilities and importantly the style of his malts is spot on, and just gets better with every new release. This malt is classically malty (as all whiskies should be), crisply intensive and the malt flavours just hang around for what seems an eternity. Look out for the magic oak spice on the nose. David Baker's combo malt, where he matures his spirit in 2nd fill bourbon barrels and used French oak casks...and what a dram he gets at the end. Smelling more grainy than the Classic, more fresh grain than malted, there's also a load of vanilla, coconut, dried fruits and kitchen spice flavours coming off as well. The French oak spice marries perfectly with creamy cereal flavours on the palate. And once again this malt just fill every crevice of your palate. And once again, the flavour just hangs around for ages. (pic is a representation only)

It amazes me that the increase in alcohol is not just "an increase in alcohol" attack on the palate. Cask strengths just have a habit of reavealing more complex flavours and textures than their softer cousins. And this cracker from David Baker is no exception. The peat is intensified, there's an earthiness and cherry/berry flavours not seen in the 46% and on the palate it is just explosive. And it's all in balance as there is plenty of creamy oak and malt to balance up the high strength alcohol. Great stuff David Baker.

I never thought I would say this about an Aussie malt...but this is a masterpiece. Soft, pulpy, subtle fruitiness, sweet vanilla oak and then you notice the peat sitting underneath. A distant bonfire, dry and tangy that works really well with this malts quite sweet & rich palate. Very long palate with (once again) a smoky tanginess that hangs around for ages. brilliant stuff and a credit to David's distilling skills. (pic is a representation only)

I met Gareth Andrews some time ago at a Wheatty function and for a chap who is a self-declared shy person, once warmed up there is no stopping him, especially when the topic turns to whisky. And importantly when it turns to the making of whisky. He was a brewer that felt that whisky making for more important. So he gave up the brewing! His attention to detail, his thorough understanding of the art and process of distilling and importantly the primary role of oak was in a word, breathtaking. So this is his first release and what a joy it is. This 3yo is all about softness, texture, balance, maltiness and just the right amount of oak. And it has it by the bucket loads as it is so rich and textured. There's hints of cinnamon, soy sauce, soft citrus fruitiness and lingering barley sugar flavours. And I thank the the supreme whisky deity that he bottled it at 52%. Only 600 bottles produced.

This is Gareth Andrew's second release and with it, he introduces peat into his whisky for the first time. He describes it as lightly peated and i couldn't agree more. The peated grain I believe is sourced from the UK while Aussie port casks (American oak based) are used for the maturation. All in all it's a ripper combination of Gareth's finely tuned, fruity spirit with some richly fruited port oak flavours. He describes it as having, "smoky maple and baked vanilla" characters. Nice one GA.

Heartwood Lost Convict Port

Seems like Tim Duckett is on a roll at the moment as we have had another new release from his Heartwood range come into the warehouse last week. After tasting 7 or 8 work in progress drams with Tim and Chris from Larks we finally arrived at the new Lost Convict. The spirits was sourced from both Larks and Sullivans Cove, but the wood treatment this time comes from old port barrels. Nosing it was a surprise: it appeared to be balanced but subdued. Controversy No 1! Lots of soft sweet malt, crème caramels and subtle dried fruit flavours. And then to the palate: It’s explosive. So back to normal. The spirit is bright and lively, the palate, as usual; is magnificently long, but the explosiveness slowly peters out. And the prime flavours? A unique combination of lusciously sweet maltiness with tangy Chinese five spice. But there is something else in there that I can’t quite put my finger on. But it just lingers and lingers. So to controversy No 2: the audience we showed it to last week was split 50:50. Some absolutely loving it, like me, others just turned their noses up, and that’s putting it mildly.

An Aussie 10yo standard issue malt. Now I've been waiting for this for some, as I always had my suspicions that some advanced is what the local industry needed. Be warned this is a very crisp and intensive dram, but shows good crisp (there’s that word again) malt flavours, subtle American oak and a moderately lengthy palate. But it has such a lasting, malt driven flavour. There’s hint of “cold steel” in there, I suspect it’s a distillery hallmark, but it doesn’t really detract from the overall pleasant experience.An Aussie 10yo standard issue malt. Limeburners M209 Peated

A very limited release from the chaps at Great Southern Distillery. A relatively young whisky with a very moderate dose of peated malt. The malt is grainy and crunchy, the oak being American, delivers a good dose of creaminess to the nose but the peat doesn't show until you get it on the palate. Great length, lively spirit with a touch of saltiness, crisp malt and then you get the gentle dryness of the spicily smokiness of the peat. And there is a nice touch of lingering honey sweetness at the end. Nice one!
